Yoga days are my celebration days. The days where I feel what my body can do and what my mind can achieve. A mind achiever has a grateful heart who knows when to accept and when to let go!

Ingredients:
1 cup freekeh (Green whole cracked wheat) I LOVE AMAZON"S FREEKEH
1 cup nuts *pine nuts and walnuts
1 cup chopped parsley
1 handful fresh mint
1 handful chopped cilantro
2 baby cucumbers
A pinch of salt
2 tbsp caraway
2 lemon juice
1 tbsp dijon mustard
3 minced garlic
Olive oil
Preparation:
Wash wash wash freekeh
Prepare a skillet. Heat a drizzle of olive oil in skillet. Roast nuts. Remove nuts from skillet. Add another drizzle of olive oil to skillet. Roast freekeh with salt and caraway for about 5 minutes. Add 1 1/2 cups water to freekeh and simmer on medium to low heat until water is completely absorbed. In the meantime, chop parsley and cucumbers. Prepare salad dressing by mixing lemon juice, dijon mustard, garlic, a pinch of salt, and a drizzle of olive oil.
Remove freekeh from stove. Let it cool COMPLETELY. Prepare a salad bowl. Add parsley,mint, cilantro and cucumbers. Add freekeh to bowl. Add dressing. Mix..............................................Phenomenal!
