Hello all, have I mentioned to you before how much I love yoghurt? Hmm, probably not. So today and on a beautiful sunny breezy day, I went crazy in the kitchen and baked a pistachio yoghurt perfect cake.
This is how I expressed my love to yoghurt :)
Ingredients:
1/2 cup shelled pistachios
1 cup all purpose flour
2 tbsp baking powder
1/2 tsp salt
3 eggs seperated
2/3 cup brown sugar
1/2 cup whole milk yoghurt
1/2 cup olive oil
powdered sugar for decoration
Preparation:
Butter the bottom and sides of a pan. Cut a sheet of parchment paper to fit the pan. Butter parchment paper.
Heat oven to 350 degrees F
Place pistachios in a food processor and grind to powder.
Mix pistachios with flour, baking powder, salt.
In a bowl, whisk egg yolks with 1/3 cup sugar until thick.
Beat in yoghurt and olive oil.
Fold in flour mix.
Beat egg whites. Add remaining sugar and continue beating.
Stir in batter. Mix thoroughly
Pour batter in pan
Bake until golden brown
Serve with yoghurt garnished with pistachios
