I dug this heavenly recipe from the Italian corner of my heart and I can't stop eating!
Ingredients:
1 pack whole wheat Fettuccine
1 pound jumbo shrimp
1/2tsp salt
1/2 tsp sumac
1/3 cup olive oil
1/3 tsp black pepper
1 chopped onion
1 cup chopped italian parsley
10 chopped or whole garlic cloves
1/3 cup toasted pine nuts
2 cups baby campari tomatoes
1 pack sun dried tomatoes (10 tomatoes)
Preparation:
Boil water in a saucepan. Add 2 tbsp olive oil and 1/3 tsp salt
Boil Fettuccine for about 7 minutes
Drain
Reserve half a cup of Fettuccine cooking water
In a saucepan, heat 1/3 cup olive oil over medium heat. Add the chopped onion and sautee until golden brown
Add a pinch of salt
Add sumac
Add black pepper
Add garlic
Add the sun dried tomatoes
Add the shrimp and cook over medium heat
Add parsley and tomatoes
Add 1/2 cup Fettuccine cooking water
Simmer for about 7 minutes
Add the cooked Fettuccine and toss to combine
Serve Fettuccine with toasted pine nuts on top
