Ma'akaronah Blaban, was my mama's homestyle dish during hot summer days in Beirut. And because summer is at our front door, I have started my cooking with this easy, simple, white recipe.
Ingredients:
1 pack of spaghetti
3 cloves of garlic
1 chopped zucchini
Half 32 oz of plain goat yoghurt
1/2 cup roasted pine nuts
Salt
Black pepper
1 tbsp dry mint
Olive oil
Parsley for garnish
Preparation:
Boil spaghetti with a drizzle of olive oil and a pinch of salt
Drain spaghetti
In a skillet, add 1 tbsp olive oil and roast pine nuts. Set aside
Prepare a skillet for pasta. Heat 4 tbsp olive oil. Sautee zucchini . Sautee garlic. Remove skillet from heat. Add yoghurt, add spaghetti, add salt and black pepper. Mix
Garnish with parsley, dry mint and pine nuts
Serve warm and hello summer days
