Purple and white are my two favorite colors. Why not combine purple baby aubergine and Atlantic white cod and have fun on a beautiful fall day.
Ingredients:
2 baby aubergine
2 fish fillet (cod)
2 medium potatoes
1/3 cup olive oil
1 cup vegetable oil (for frying potatoes and aubergine)
1 diced onion
5 finely chopped garlic cloves
1/2 cup chopped cilantro
Salt
1 tsp cumin
1/3 black pepper
1 lemon juice
Pomegranate seeds
Pita bread
Preparation:
Peel potatoes and cut into cubes. Add a pinch of salt
Cut aubergine into big cubes (skin on) Add a pinch of salt
Heat vegetable oil
Fry the potatoes. Place a paper towel on a plate. Place potatoes on the paper towel
Fry the aubergine. Place on the paper towel
In a skillet, heat vegetable oil. Add the onions and then the garlic. Saute until dark brown in color
Add the cod. Add salt, black pepper and cumin
Cook on both sides on medium heat for about 7 minutes
Add the potatoes and the aubergine to the skillet
Shake or stir gently. Simmer on low for 2 minutes
Remove from heat
Add lemon juice
Add chopped cilantro
Garnish with pomegranate seeds
Serve with pita bread
