Do you like porridge? Well, if you do, you're going to like this hearty,nutritious, simple soup.
Ingredients:
1 small chopped onion
1 cup freekeh (triple washed) * I love Amazon's freekeh
1 1/2 cup fresh basil about two branches
Salt, to taste
White pepper, to taste
1 tbsp ground cinnamon
7 cups water
Drizzle of olive oil
Preparation:
In a pot, heat olive oil. Add the chopped onion. Sautee. Add the freekeh to the onions. Roast freekeh with salt, pepper, and cinnamon for about 5 minutes. Add the water. Add the basil and cook freekeh for 30 minutes. Pour the freekeh in the food blender and blend. Return freekeh to the stove, and simmer for 10 minutes. Serve with drizzle of olive oil.
