Ingredients:
One whole chicken
2 onions
3 small potatoes
2 small zucchini
1/2 cup carrot
1/2 eggplant
2 beets
1 lemon
1/2 cup vermicelli
Salt
1 cinnamon stick
1/2 tsp black pepper
2 tbsp olive oil
1 tsp mystic gum for the chicken (optional)
Directions:
Bring a pot to a boil. Add 1 tsp salt, one cinnamon stick, 1 peeled onion
Place chicken in a pot. Cover and cook for 45 minutes on medium to low heat until chicken falls off the bone
In the meantime, boil the beets and cut the vegetables
To cook beets:
Bring a pot to a boil
Place beets in a pot
Cover and boil for about 40 minutes on low heat
Place beets under running water to cool
Cut into cubes and set aside
Cut onion, potatoes, zucchini, carrots, eggplant (leave skin on) into small cubes
Bring a pot, add olive oil and sautee the chopped onion on high heat for 5 minutes
Add 1 tsp salt and 1/2 tsp black pepper
Add the chopped potatoes and zucchini to the pot
Sautee for 5 minutes
Add 8 cups of chicken broth to the pot
Add the carrots and the eggplant
Cover and cook on medium to low heat for 25 minutes
During the last 10 minutes of the cooking process, add the lemon juice
Add the vermicelli
Add the beets
Add salt
Add black pepper
Add pieces of chicken to your soup
Garnish with parsley or cilantro
