Wednesdays are my trail running days and trail running early morning means warm soup for the night. YAYY for the soup season.
Ingredients:
11 vine tomatoes
1 red pepper
Olive oil
Tomato paste
Salt
Black pepper
One small diced onion
1 minced garlic
A handful of fresh mint, cilantro, rosemary, Italian oregano
Preparation:
Heat oven to 375 degrees
Wash tomatoes and bell pepper. Line them on a baking tray
Poke each tomato in the middle
Brush tomatoes and bell pepper with olive oil
Bake for an hour or so to get the smoky tomato flavor,YUM
In the meantime,prepare a skillet with a drizzle of olive oil. Sautee onions and garlic. Add the chopped cilantro to the skillet
Remove tomatoes and bell pepper from oven
Let cool
Place tomatoes and bell pepper in a blender. Add the onions, garlic, cilantro to the blender. Blend
Add the mint, thyme, and oregano to the blender. Blend
Pour the mix in a pot. Dilute 2 tbsp tomato paste in one cup hot water. Add to the soup. Simmer for 10 minutes
Add Salt and black pepper
Serve
