The day I do hot yoga is the day I feel energized, creative, and fully connected with myself and immensely connected with others. I feel wonderful!
Today, I have used a bit of my creative skills and prepared a loaf full of flavor. Had it with my best friend for lunch with a bowl of soup. Can you guess who my best friend is?
Ingredients:
1 thin pizza crust
2 big sliced onions
2 tbsp sumac
1/2 cup pine nuts
1 whole chicken
2 tbsp olive spread
Drizzle of olive oil
Salt
A pinch of red pepper flakes
2 cinnamon sticks
3 bay leaves
1 egg
Handful of fresh mint and oregano
Preparation:
Prepare a deep pot. Add cinnamon sticks, bay leaves, and salt. Add water. Place the chicken in the pot and cook for about an hour.
In the meantime, slice the onions and sautee with olive oil until light brown. Add salt, sumac, and pine nuts. Roast the pine nuts in the skillet along with onions and sumac.
Heat oven to 375 degrees F
Place chicken on a platter. Debone chicken
Add chicken pieces to the onion sumac pine nut mix
Spread pizza dough on counter
Spread olive paste on dough
Add chicken to dough
Roll dough in about three to four folds
Drizzle olive oil or line a tray with parchment paper. Place loaf on tray. Bake for 40 minutes
During the last 5 minutes of baking, beat an egg with a handful of herbs. Pour on loaf
Serve loaf with yoghurt or salad on the side.
