Once upon a time I was obsessed with stuffed zucchini cooked in yoghurt sauce and still am. Summer days are long and here my princess sitting down next to me watching me prepare my favorite and not so much of hers. My princess likes stuffed zucchini with grape leaves cooked in lemon sauce. I promised her we will prepare it together one day.
Ingredients:
12 small zucchini
Half pound ground beef
3/4 cup pearl rice
Salt, to taste
Black pepper, to taste
Cinnamon powder
3 minced garlic
1 cup chopped cilantro
4 cups goat yoghurt
Drizzle of olive oil
1/2 cup pine nuts
Preparation:
Wash and core zucchini. Place a pot of water on stove for boil. Add 1 tsp salt. In the meantime prepare the stuffing for the zucchini. In a bowl, mix beef,rice, salt, black pepper, and cinnamon. Spray with a little oil. Mix
Stuff each zucchini with the mix about *3/4 the way to the top. Add stuffed zucchini to boiling pot. Cook on medium heat for about 30 minutes/uncovered/until zucchini are cooked.
Spray a skillet with olive oil. Roast pine nuts. Remove nuts then add garlic and cilantro. Sautee for 2 minutes. Remove
Prepare a cooking pot for yoghurt. Add yoghurt, salt,and black pepper. Stir until yoghurt starts bubbling. Reduce heat. Add cooked zucchini to yoghurt. Cover zucchini with yoghurt and simmer for 10 minutes. Add cilantro garlic mix. Top with roasted pine nuts.
