I love stuffed zucchini cooked in all kinds of sauces and especially this one, Ablama. Zucchinis are cored and stuffed with beef instead of rice and beef cooked in garlic lemon sauce. SO GOOD!
Ingredients:
10 summer zucchinis
1 pound ground beef
1/2 cup pine nuts
1 chopped onion
Olive oil
Salt, to taste
Black pepper
1 tsp seven spices
2 tbsp dry mint
3 minced garlic
2 squeezed lemons
Preparation:
Core the zucchini. Wash and prepare to brown. Prepare a skillet, add about 1/4 cup olive oil and heat. Add the zucchini and brown on both sides. Remove from skillet then add 7 tbsp olive oil to cook the onion beef mixture.
In a skillet, heat about 7 tsp olive oil. Add the onions and the ground beef to the skillet. Add salt, black pepper, seven spices. Cook the beef for about 7 minutes then add the pine nuts.
Stuff the zucchini with the beef mixture and place in a casserole dish or serving pot.*I am in love with my Le Creuset. Add water to barely cover the zucchini. Add garlic, dry mint, and lemon juice. Simmer on medium to low heat for about 25 minutes. Serve with rice of your choice
