Potatoes, patatas, patate, batata, or kartofil, are starchy popular vegetables and all mean the same. But, did you know that The Inca Indians in Peru were the first to cultivate potatoes? Here is one of my favorite potato recipes, YUM
Ingredients:
I bag of honey gold potatoes (about 12 small potatoes)
1/2 pound ground beef (90% lean 10%fat)
1 small chopped onion
I pound cherry tomatoes
Salt, to taste
White pepper, to taste
Black pepper, to taste
1 tsp seven spices
1 lemon juice
1/3 cup olive oil
Cilantro for garnish
Preparation:
Peel potatoes. Wash then cut a thin slice off the top of each potato. Scoop out the pulp. *Save the pulp
Prepare a skillet. Add olive oil and fry potatoes on high heat for about 5-7 minutes on each side. Remove potatoes then fry the pulp.
In the meantime, mix the ground beef with the chopped onion. Add salt, black pepper, and seven spices to the meat. Prepare a skillet, add a drizzle of olive oil, cook the beef.
Arrange a round or rectangular pan. Arrange the potatoes around the pan. Stuff each potato with ground beef. Add the pulp and the tomatoes in the centre of the pan. Boil 3 cups of water. Add salt and white pepper to the boiled water. Add 1 squeezed lemon juice. Pour the water into the pan. Heat the oven to 375 degrees F
Bake potatoes for 45 minutes.
Garnish with cilantro
Serve with rice
