I not only walked with grandma, folded laundry with grandma, lived my summer days with grandma, but I also rolled fresh grape leaves from the vine with grandma.
Grandma Fadwa has left me with big memories that have touched my heart forever and ever.
Ingredients:
3/4 cup pearl rice
1 1/2 cup chopped parsley
1 cup fresh mint
1 cup chopped tomatoes
1 small chopped onion
1 tbsp dry mint
1 tsp salt
Dash black pepper
1/3 tsp 7 spices
2/3 cup olive oil
1 big lemon juice
2 potatoes cut into circles
1 jar California grape leaves
Preparation:
Wash grape leaves. Remove stem
In a bowl, mix rice, parsley, mint, tomatoes, chopped onion, dry mint, salt, black pepper, 7 spices, 1/3 cup olive oil, lemon juice. Was the grape leaves. Remove stems. Lay flat on a board or counter and start rolling.
Add about 1 tbsp of the mixed rice vegetable on each leaf and roll
Grape leaves have one soft side and one rough side. Place the rough side down when rolling
Prepare a cooking pot, cut the potatoes and place them at the bottom of the pot. Arrange the rolled grape leaves on top.
Place a lid one size smaller than the pot the grape leaves are in to ensure unrolling.
Add enough water to the grape leaves with 1/3 cup olive oil
Cover and simmer on low heat for about 5 hours
Serve cold
Garnish with your choice of pomegranate seeds, potatoes, or fresh mint.
