STUFFED EGGPLANT WITH TOMATO

Hello vegetable lovers,
The season of zucchini and aubergine is always present at our house.  I cooked them yesterday with fresh tomatoes and fresh mint.  Absolute delight!!!

Ingredients:
12 small zucchini
10 small aubergine
Salt
All spice
Black pepper
Garlic
2 pounds tomatoes
1 1/2 pound ground beef
3/4 cup rice
Tomato paste
Lemon juice
Fresh mint

Preparation:
Cut off zucchini and aubergine stalks
Wash zucchini and aubergine
Core/hollow the zucchini and aubergine by removing inner flesh
Wash the inner hollow core.  Set aside
In a bowl, mix ground beef, rice, 3/4tbsp salt, 1 tsp all spice, and 1/3 tsp black pepper.  Mix by hand
Fill each zucchini and aubergine with the stuffing by leaving about 3/4 cm free from top.  Set aside

Fill a pot with 2 cups water
Add 1 tbsp salt
1 tsp minced garlic

Blend tomatoes in a blender
Add 6 cups fresh tomato juice to pot. Dilute 2 tbsp tomato paste in pot
Bring pot to a boil
Add the stuffed zucchini and stuffed aubergine to pot
Cover and simmer on low heat for two and half hours
Turn off stove
Add 2 squeezed lemon juice to pot
Add 1/2 cup chopped fresh mint
