Just like the story of Romeo and Juliet need no introduction so is the name of kafta Kabab, a meal full of love!
Today I stuffed baby bell peppers with kafta. I boiled the sweet potatoes and added it to the baked kafta. Can't wait until my princess arrives from Alabama and Amore to arrive from Arkansas to try the meal I prepared for all.
Ingredients:
1 pound ground beef
1 pound ground lamb
1 onion
1 parsley
Salt
1 tsp cinnamon
1 tsp seven spices
1/2 tsp black pepper
12 baby peppers( any color you wish)
3 sweet potatoes
1 can tomato paste 6 oz
1 lemon juice
Preparation:
Heat oven to 375 degrees F
Place sweet potatoes in a boiling pot and cook for 30 minutes.
In a food processor, chop the onion and the parsley. Remove from food processor and set aside. Add the beef and the lamb with salt and all the spices to the food processor. Pulse on low for few seconds. Add the onions and parsley to the meat. Pulse until you form a one meat greenish dough.
Wash the peppers. Cut the top. Core to remove seeds. Stuff baby peppers with kafta. Place in a baking tray/pan and bake for 25 minutes. Remove from the oven. Mix tomato paste with 1 1/2 cup water and lemon juice and pour onto the baby peppers. Return to the oven . Bake for additional 20 minutes. Remove from oven
Cut sweet potatoes (peel if you wish) and arrange around the pan or in between peppers.
