Happy Monday all,
There are so many things that fascinate my world. What are the things that fascinate your world the most?
Let me tell you first about those little simple things that fascinate me the most. First, chasing a butterfly in the fields fills my heart with joy. I was chased by a yellow butterfly today and felt my heart giggle.
Second, discovering, exploring, learning, and connecting with creation is my need.
Third, taking a walk with nature for nature is my source of inspiration.
Fourth, Writing and keeping a journal.
Each week I pick a mantra and this week's mantra is "Life is a journey of discoveries. Never stop."
So today, after I discovered a new running trail, explored its path, learned its language, and connected with the source of creation, I came back to the apartment and prepared an easy meal for Monday night. Can't wait for my princess to taste it first!!!
Ingredients:
1 pound sirloin flap steak (thinly sliced)
4 oz sugar snap peas (cut lengthwise)
5 baby zucchini ( cut into circles)
7 baby peppers (cut into circles)
1 cup sprouts
2 cups sliced white mushroom
1 sliced big onion
1/3 cup sesame oil
Salt to taste
Black pepper to taste
1 tbsp red vinegar
1 tbsp dijon mustard
4 tbsp teriyaki sauce
Preparation:
Heat sesame oil in a skillet. Add the sliced onion with a little salt. Sautee on medium to high heat
Add the sirloin steak to the skillet. Add salt, black pepper, red vinegar, and teriyaki sauce. Cook for 5 minutes.
Remove onions and steak from the skillet. Add the zucchini to the skillet. Sautee for 4 minutes (add sesame oil if needed). Add the snap peas, peppers, and sprouts to the skillet. Return the onions and the sirloin to the skillet. Dilute the mustard in 1/3 cup hot water and add to the stir fry. Cook for 2 minutes. Add the mushrooms. Mix all together.
