Charles Dickens has welcomed spring saying,"It was one of those March days when the sun shines hot and the wind blows cold. When it is summer in the light and winter in the shade."
Today, I have welcomed spring with a long nature run from home all the way to the History Museum in Atlanta. A quick lunch creating "Spring In A Dish", then from school to the stables with a lesson on Joi.

Ingredients:
1 pound top sirloin for stir fry *Or your choice of chicken tenderloins or fish
3/4 cup barley
2 beets
1 chopped onion
5 garlic cloves
1 cup chopped cilantro
Salt
1 tbsp caraway
1 tbsp sumac
Olive oil
1 tbsp BBQ sauce
Preparation:
Marinade sirloin with salt, caraway, sumac, and a drizzle of olive oil for an hour.
Wash beets. Place in a pot and boil for 35 minutes
Wash barley. Place in a pot. Add one cup water with a dash of salt and cook uncovered for 20 minutes.
Prepare a skillet, add a drizzle of olive oil and sautee onions until dark brown. Add sirloin and sautee for 4 minutes. Add cooked barley (barley should be nutty) to the onions and sirloin. Add the chopped cilantro. Add the garlic cloves. Slice beets into circles and place on top of barley.
Mix 1 tbsp BBQ sauce in half a cup of hot water and add to the skillet.
Simmer on medium to high heat until water fully absorbed.
Serve with yoghurt
