You will love this recipe because it is easy and super quick PLUS delicious! I prepared it before amore's travel to Germany . I used my creativity with a twist!
Ingredients:
1 pound shrimp peeled* I left tail on
1 chopped onion
5 chopped garlic * not minced
3-4 sage leaves
1 cup uncooked couscous *I used turmeric couscous
4 tbsp tomato paste
Salt
Black pepper
1/2 tsp dry rub
Olive oil
Preparation:
Heat olive oil in large skillet. Add chopped onions and garlic. Sautee for 10 minutes. Add shrimp to skillet. Season with salt black pepper and dry rub. Add sage leaves to skillet. Cook shrimp for 5 minutes or until shrimp turns pink in color. Remove shrimp from skillet
Add couscous to skillet. Dilute tomato paste in 2 cups boiling water. Add paste to couscous.
Simmer on medium heat for about 15 minutes. Add shrimp to skillet at the last 4 minutes of coking. Serve
