smelt on toast

Impress yourself and your guests with this unique outstanding combination and serve fried smelt on a toasted bread with hummus and fresh cilantro. 
Keep shining and shine on with this silvery appetizer.

Ingredients:
French toast
2 pounds frozen smelt (lucky if you can find fresh ones)
Salt
Black Pepper
Hummus
Cilantro
Lemon 
Vegetable oil

Directions:
Place smelt in a deep bowl
Season with salt and pepper
Toss and set aside for 5 minutes
In the meantime, heat oil
Fry smelts for about 3 minutes on each side
Remove to paper towel
Toast the bread
Spread one tbsp of hummus on bread
Arrange smelt on toast
Garnish with cilantro and lemon juice
