Happy Monday,
Shawarma bowls for lunch on a beautiful sunny 60 degrees temperature weather.
Ingredients:
For the shawarma:
Small size pita bread
2 pounds tenderloin bites
Salt
Black pepper
1 tsp garlic powder
Olive oil
1 tbsp white vinegar
1 sliced onion
For the yoghurt dip:
2 cups plain yoghurt
Salt
Black pepper
1 tbsp dry mint
1 chopped cucumber
1 tbsp tahini
For the toppings:
1 cup sweet corn
Chopped parsley
chopped tomatoes
chopped radish
Preparation:
In a bowl, mix a drizzle of olive oil, salt, black pepper, garlic powder and vinegar. Add tenderloins to bowl. Mix, cover and place in fridge.
In the meantime, chop parsley, tomatoes, and radish and prepare yoghurt dip
To prepare yoghurt dip, in a bowl mix yoghurt, salt, black pepper, dry mint, cucumber, and tahini
To prepare shawarma:
Prepare a skillet, add a drizzle of olive oil. Add sliced onion to skillet. Sautee onions for three minutes. Add tenderloins to skillet. Sautee for 5 minutes. Remove from heat.
Prepare a plate, place one pita side of bread on plate. Add tenderloins, add corn, add vegetables with a drizzle of yoghurt dip
