What is Shankleesh?
Shankleesh is made from white goat's milk. Semi firm cheese shaped into balls crusted with thyme and other spices. It is aged and allowed to bloom to full strong flavor. It compliments so well with honey, nuts, or served the Lebanese way.
Ingredients:
3 balls Shankleesh cut into small pieces( or substitute with feta cheese)
1 chopped tomato
3 green onions
Drizzle of olive oil
A squeeze of lemon juice
Preparation:
Crumble Shankleesh into a bowl. Add tomatoes and onions. Drizzle olive oil and lemon juice.
Eat with pita bread
On a funny Lebanese joke: We say to little kids,"Go wash your feet, they smell like Shankleesh"
