The first time I had shakshookah was when my mom prepared it with onions tomatoes and green peppers and I loved it.
Today, I wanted a side dish with grilled chicken and I had some mini peppers from the farmer's market that we bought couple of days ago. So, I thought of shakshookah and added couple more ingredients to it and adapted it to my taste.
Exceptionally simple and flavorful!
Ingredients:
1 sliced onion
A handful of whole garlic
1 cup chopped tomatoes
2 cups whole mini peppers (green or red)
A handful of walnuts
A handful of fresh mint
2 tbsp tomato paste
Salt
1 tbsp cumin
1/4 tsp chili pepper
Drizzle of olive oil
Parsley for garnish
Preparation:
Heat olive oil. Add chopped onions. Saute for 5 minutes. Add garlic, tomatoes, peppers, walnuts, mint, tomato paste, salt, cumin, and chili pepper. Add 2 cups water and simmer on medium to low heat.
Serve and garnish with fresh parsley
