Shakshookah And Bananas

Hey happy travelers,
Jet lag and I are not really good friends.  Last night, I went to bed at 9:30 p.m. and woke up at 4:30 a.m. thinking it is 5:30 a.m. Not bad for the second night with jet lag, right?
I showered,put on my yoga pants, and did my morning ritual.  I love this early morning time where I am alone but not really alone.  I am alone with thought.  I am with me.
I knew I will be having a long day.  I prepared a super healthy breakfast with a cup of tea.  My daughter woke up around eight saying,"Good morning mama.  It smells really nice." "It is Shakshookah And Bananas sweetheart," I said.

Ingredients:
1 small chopped white onion
1/3 cup chopped mixed peppers
One bunch fresh chopped cilantro
1 tsp fresh ginger
3 eggs
Half mashed banana
1/2 tbsp sumac
Salt
Black pepper
Drizzle olive oil

Preparation:
Heat a skillet with olive oil. Fry onions. Add bell pepper.  Sautee for 3 minutes. Add ginger and cilantro. Add bananas.  Add eggs to  onion pepper mix. Add sumac, salt, and black pepper. Cook for 4 minutes until egg whites are just set.
