Ingredients:
5 1/2 cups whole milk
1/2 cup pearl rice
3 tbsp cornstarch diluted in 3/4 cup water
1/2 cup sugar
1 tbsp rose water
1 tbsp orange blossom
1/3 tsp mystic gum
Ground pistachio
Preparation:
Soak rice in hot boiling water for 25 minutes
Whisk cornstarch with water. Set aside
In a saucepan, heat milk over medium heat
Bring to a boil
Drain rice. Add rice to saucepan and stir
Reduce heat
Cover and simmer for 30 minutes until rice is fully cooked* Add little hot water to pudding if the mixture is too thick to allow grain to cook
Stir occasionally until thickens
Add sugar, mystic, orange blossom, and rose water
Serve in bowls
Sprinkle with ground pistachios
Rice pudding (riz bhaleeb) can be served warm or cold
