How I love to host this adorable couple and how I love their togetherness. Together they explore and together they hike, bike, climb, dive, and paddle. I see love, youth, and adventure. I follow them with mind and soul and I also follow them on their Instagram page and get inspired by their activities. So tonight, I prepared for them raspberry rice pudding to fuel their energy just like they fuel my heart with love.
Ingredients:
1 cup fresh raspberries
1 1/2 cup sugar
1 cup short grain rice
5 cups whole milk
1/3 cup rose water
Pistachio
1/3 tsp mystic gum
Preparation:
Soak rice in 2 cups water for about an hour. Boil on low to medium heat until water is fully absorbed. Add milk and continuously stir for about an hour until pudding thickens. Add sugar and stir. Add raspberries during the last 10 minutes of the cooking process. Add mystic gum and rose water after you remove rice pudding from the stove. Serve in cups. Add pistachio and serve cold or at room temperature.
