Ingredients:
7 Idaho potatoes
1 eggplant
Salt
White pepper
1 lemon juice
1/2 cup chopped cilantro
1/4 cup olive oil
Wild berries for garnish (optional)
Preparation:
Heat oven to 400 degrees F
With a fork poke eggplant and grill with skin on for an hour
Wash and cook potatoes for about 35 minutes
Let potatoes cool. Then peel and cut potatoes into cubes Place potatoes on a platter or deep bowl
In a clean bowl, mince garlic then add lemon juice, salt, white pepper to bowl. Remove eggplant from oven. Peel and mush in bowl (the garlic lemon juice bowl. Add eggplant mix to potatoes. Toss and add cilantro
