There is Valentine's Day, Shamrock Day, World Laughter day, and Mother's Day and there is not only Soup Day but also Soup Month here at Atayeb. And how I love receiving soup compliments!!!
This soup is creamy, hearty, and full of tradition.
Ingredients:
1 big boiled potato
1 cup burgul
1 1/2 cup flour
1 onion
Salt
White pepper
1 tbsp dry mint
1 tbsp cumin
1 tsp coriander lime
1 tbsp seven spices
1 cup chopped parsley
7 cups water
1/2 cup fresh lemon juice
Preparation:
Boil the potato (with skin on) for 10-15 minutes
Let cool
Wash burgul and place in a colander. Squeeze by hand to remove excess moisture
Prepare the food processor. Place the burgul in the food processor. Add salt and white pepper. Pulse on low for couple minutes. Add the potato and flour. Pulse on low/ couple beats.
Chop the onion. Add salt, cumin, coriander lime, seven spices. Use your hand to mix onion with spices. Add the onion to the potato burgul flour dough. Pulse
Use the potato dough to form little balls. Set aside
Prepare a pot. Add water and salt and bring it to a boil. Add the potato burgul balls. Cook for about 30 minutes. Add 1/2 cup or according to taste lemon juice. Add parsley.
*If soup is too thin, you can dilute 2 tbsp flour with little water and add to the soup
