Today, I am thankful for potatoes :)
Ingredients:
7 Idaho potatoes
1/2 pound ground beef
1 chopped onion
2 cups chopped basil
2 tbsp unsalted butter
1/2 cup milk
Salt
Black pepper
1 tbsp cinnamon
2 tbsp pomegranate molasses
1/2 cup pine nuts
olive oil
Preparation:
Wash and boil potatoes for 40 minutes
In the meantime, prepare a skillet. Drizzle olive oil in skillet. Add chopped onions. Sautee for 10 minutes. Add ground beef to skillet. Add salt, black pepper, and cinnamon. Cook on medium to low heat until ground beef is fully cooked. At the end of cooking process, add pomegranate molasses and pine nuts. Cook for another 5 minutes.
Allow potatoes to cool down. Peel potatoes and mash by hand or by a food processor. Add milk and butter to potatoes. Add basil to potatoes. Add salt and black pepper to potato mix.
Heat oven to 375 degrees F. Prepare a pan . Drizzle olive oil in pan. Equally divide potato mix in two portions. One for the bottom layer and one for the top layer. By hand flatten the first layer of potato basil mix. Add cooked ground beef onto potato layer. By hand flatten the top layer of potato basil mix. Add a drizzle of olive oil on top. Cut into squares or diamonds. Bake for 20 minutes.
Serve with salad or yoghurt cucumber dip
