Impressive!!!! You sit and chat with your Venezuelan friend for an hour and you get tons of life inspirations. I got inspired by Maria and carried my cooking skills to a whole new level. See, when I fly, I either visit Italy or Lebanon. Soooo, today I decided to fly and make homemade Biscotti.
YUP, never tried it before so I went on line, searched, and changed couple ingredients.
The result is: I had to hide them away from Amore and the rest of the family. They simply loved it!!!
Ingredients:
2 cups flour
1 1/2 tsp baking powder
3/4 cup sugar
1/2 cup unsalted butter
1/2 tsp salt
2 eggs
2/3 cup chopped dried pistachio
3/4 cup semi sweet chocolate chips
Preparation:
Heat oven to 350 degrees F
Line a baking sheet with parchment paper
*Sift flour and baking powder. Set aside
Beat sugar, butter, lemon zest, and salt. Beat in eggs
Add the flour mixture and mix well
Stir in the pistachio
Form the dough into 12 inch long, 3 inch wide on the parchment sheet
Bake for 40 minutes
Remove
Let cool COMPLETELY
Place the Biscotti on the board and cut diagonal
Rearrange the Biscotti on the baking sheet and bake again for 15 minutes
Remove and cool completely
Melt the semi sweet chocolate chips
Dip the bottom of the Biscotti in chocolate
Let cool
