April and May, the busiest months of the entire year full of engagements, graduations, birthdays, parties, and school activities.
In the midst of it all, today I managed to make this happy half moon pine nut cookie for the happiest occasion.
This cookie is called Snoubriyeh which means"land of pine nuts". Snoubriyeh, is a traditional cookie presented during the time of engagement parties in Lebanon with a cup of fresh orange juice.
Snoubriyeh is rarely prepared at home but since friday is my day, here I am sharing with you all about this happy cookie with its glad tidings.
It is simple, easy, and full of aroma.
Ingredients:
2 cups roasted almonds
1 1/3 cup pine nuts/ plus 1 cup for decorations (not roasted)
3 cups flour
1/2 tsp baking powder
1/2 tsp mystic gum
1/3 cup rose water
1/3 cup orange blossom
1 1/2 cup sugar
5 egg whites
4tbs butter
Preparation:
Place butter in a pan and roast almonds then pine nuts until golden brown
Remove, set aside to cool
Place almonds and pine nuts in a food processor and blend
In a big bowl, add the flour, rose water, orange blossom, and baking powder. Mix all ingredients together, then add to pine nut and almond mix. This is your Snoubriyeh dough
Whisk 4 egg whites and add to the dough
In a pot, dilute sugar with 1/2 cup water
Add mystic gum
Add the Snoubriyeh dough to the pot
Mix on stove on medium heat for about 10 minutes
Place one cup pine nut on the kitchen counter
Whisk one egg white in a bowl
Heat oven to 375 degrees F
Line a baking pan with parchment paper
Place the dough on counter
Roll out the Snoubriyeh dough
Use a crescent dough cutter
Cut the dough
Dip in egg white
Roll dough with pine nuts
Place on baking tray
Bake for 10 minutes
