Okra, one of the healthiest prettiest meal you can count on and prepare for your family. I do apologize to my number one vegetable, which is eggplant, but okra is in big competition with eggplant during these fasting days.
Ingredients:
1 big chopped onion for okra
1 small whole peeled onion for lamb
10 garlic cloves
1 cup cilantro
3 cups chopped tomatoes
1 can tomato paste
1/3 cup olive oil
2 tsp salt
1 tsp black pepper
1 tsp caraway
1 tsp coriander
2 bay leaves
1 cinnamon stick
1/2 tsp nutmeg
1 tbsp pomegranate sauce
2 Frozen bags okra
2 pounds lamb stew
Preparation:
For lamb stew:
Bring a pot to a boil
Add 1 tsp salt to pot
Add one whole peeled onion
Add bay leaves, cinnamon stick, and nutmeg
Add stew and cook on low heat for 45 minutes
For okra:
Heat oli in a flat cooking pot. Why flat? To prevent mushed okra
Sautee onion until golden brown
Add garlic to the onions with a dash of salt and black pepper. Sautee for 7 minutes
Remove and set aside on a plate
Add the okra to the pot
Add 1 tsp salt, black pepper, caraway, coriander to okra
Gently mix *Do not over stir okra. Leave on stove on low heat for 5 minutes
Add chopped tomatoes to pot
Dilute tomato paste with 3 cups lamb broth
Add pomegranate sauce
Add to cooking pot
Cover and simmer for 25 minutes
Garnish with fresh cilantro
Serve hot with cooked rice
Use pita and dip in
