It is freezing here in Houston and when the temperature drops, my energy level goes up :)
I hit the gym for body pump and body combat combined or I bundle up and start my early jog.
BUT, I have my weaknesses. I have a sweet tooth. I crave chocolate and sweets, I am craving Nammoura on this cold freezing day.
Ingredients:
2 cups fine Farina or semolina (coarse wheat)
1 1/2 cup coconut flakes
1 cup yoghurt
1/2 cup vegetable oil
1 cup sugar
1 tbsp baking powder
1 tsp powdered milk
1 tbsp orange blossom
2 tbsp rose water (1 tbsp for Nammoura and 1 tbsp for the syrup)
1 tsp Tahini (sesame paste)
1 cup finely chopped dates (you can soften the dates with some water or orange blossom)
Preparation:
Mix all the ingredients together (except the dates and the tahini)
Cover and let rest for 2 hours
In the meantime, prepare your syrup.
For the syrup:
2 cups sugar
1 cup water
1 tsp lemon juice
Place water and sugar over medium heat
Bring to a boil
Add lemon juice
Boil for aboout 5 minutes
Add rose water
Let cool
Heat oven to 375 degrees
Grease a small baking pan with tahini
Spread Nammoura evenly and flatten with a spatula.
Cover the first layer of Nammoura with date paste
Add another layer of Nammoura
Bake for about 25-30 minutes until golden brown
Take out from oven and pour the cooled syrup on top
Let cool
Serve with a cup of cold milk, tea, or coffee
