Mujaddara, Yellow Lentils

A simple easy recipe after a long weekday run.Some call it Mujaddara, others call it Mudardara.  Both taste great as long as you caramelize the onion and then use your creativity after.

Ingredients:
1 small chopped onion
1 cup yellow lentils
1/2 cup burgul (cracked wheat)
Salt
Black pepper
Olive oil
A handful of chopped parsley, tomatoes, mint, green onions, cucumbers

Preparation:
Add a drizzle of olive oil to a deep pot.  Add the chopped onion and sautee until dark brown.  Add the washed lentils and the burgul to the pot.  Add 2 cups water and bring to a boil.  Cover and simmer on low heat until water is fully absorbed.  *Add water if needed to get to a mushy mixture. Add salt and black pepper. Serve with chopped vegetables and a drizzle of olive oil.
