The first time I tasted Muhammara was at a dear Syrian friend's dinner party. What attracted my eyesight was the color of this beautiful appetizer and what attracted my taste buds was crunchy walnut. Years later, Muhammara remains to be one of many colorful vibrant appetizer presented at Iftar.
Ingredients:
1 1/2 red bell pepper
1/2 cup walnuts
4 tbsp tahini (sesame paste)
1 cup toasted pita bread about 1 small flat pita bread. * Cut bread into small pieces. You can either toast pita in olive oil or bake it

2 green onions
Preparation:
Heat oven to 400 degrees F
Wash the bell pepper . Cut in half. Remove seeds. Place them on a baking pan and grill for 30 minutes.
Let peppers cool down. Place peppers in a food processor. Add walnuts, tahini, toasted pita bread, and a pinch of salt. Pulse for couple of minutes. Serve Muhammara in a bowl or flat platter. Add green onions and a drizzle of olive oil. Use pita, chips or any vegetable to dip in.
