A little secret from Atayeb's corner today to say that Mouloukhiyah is my favorite dish.
Mouloukhiyah (Jute leaves) is so well known all across Asia and Africa. Every house knows what Mouloukhiyah is and whenever Mouloukhiyah is cooked, they all go YUUUM!
Ingredients:
1 bag dried Mouloukhiyah (Jute leaves)
1 whole chicken
3 big chopped onions for Mouloukhiyah
1 onion for chicken broth
2 full bulbs of garlic (one minced, one sliced)
2 bunches of fresh cilantro about 2 cups
1 tbsp fresh ginger
Salt, to taste
Black pepper, to taste
2 cinnamon sticks
1 tsp cumin
3/4 tsp seven spices
4 bay leaves
1tbsp cinnamon powder
1 tomato
2 lemons
1/3 cup olive oil
Pita bread
Preparation:
Soak Mouloukhiyah leaves in warm water and chopped lemons.
Wash after a 10 min soak, squeeze by hand, and place in a colander.
Prepare the chicken for boil (Add salt, bay leaves, onion, and cinnamon sticks)
In a saucepan,heat olive oil and sautee the onions, garlic (whole and minced) and ginger. Set aside
Add the mouloukhiyah leaves to the saucepan with an extra drizzle of olive oil if needed. Add salt, seven spices, black pepper, cumin, and cinnamon. Stir/sautee/or roast with spices for about 10 minutes
Add the onion garlic ginger mix to the Mouloukhiyah
Add one whole tomato (unchopped) to the Mouloukhiyah
*Love tip: My mother in law ( 82 years old) taught me a love cooking tip. She taught me to place a whole tomato while cooking Mouloukhiyah to prevent bitterness and thickness. (Thank you)
Add 5 cups of chicken broth to the Mouloukhiyah. Cover pot and cook on medium to low heat. keep adding broth until Mouloukhiyah is fully cooked. Takes about 3 hours
In the meantime, debone the chicken and set aside
During the last process of cooking, add the chicken and the fresh cilantro. Add little salt
Serve Mouloukhiyah with rice on the side with a squeeze of lemon juice.
Do not forget to use your fingers and use pita bread while dipping into this delicious dish. YUUUM
