A little warm meat pie called "Sfeeha Ba'albakiyeh" createed an extraordinary touch on our dinner"Iftar" table today.
Just like the Romans are known by their temples in Ba'albak, Lebanon, Ba'albak is know by its Sfeeha (meat pies)
A mini pastry filled with meat and spices. Atayeb today added chopped tomatoes and decorated it with fresh mint to bring out the best Sfeeha taste.
Ingredients:
For the dough:
3 cups flour
1 cup warm water
1/3 cup olive oil
1/2 tsp salt
1/3 tsp white pepper
1 tsp yeast
*Rule of thumb: Your dough should feel like a soft earlobe. Add flour if dough is sticky
For the filling:
1 pound ground beef
2wedges of creamy swiss light cheese
1 tsp salt
1/2 tsp white pepper
1/3 tsp paparika
1 tsp sumac
4 tbsp sesame paste
2 tbsp pomegranate sauce
Pine nuts, tomatoes, mint for garnish
Directions:
Prepare the dough. Let rest for half an hour
In a bowl, mix the ground beef, creamy swiss cheese, salt, white pepper, paparika, sesame paste, pomegranate sauce, sumac
Roll the dough
With a cookie cutter or cup , cut out the dough
Place 1 tsp of beef mix in the centre
Pinch four sides to obtain shape of Sfeeha
Heat oven to 375 degrees F
Place Sfeeha on greased pan and bake until golden brown
Add roasted nuts, tomatoes, mint
Serve warm with a drink of fresh yoghurt or have with yoghurt on the side
