
Eggplant lovers,
Yummm Yummm
Every time I hear the word Maghmour, I feel like I am dipped into a world of love with a spin.
Maghmour or Lebanese Moussaka'a was my joy to prepare and serve for Saturday evening. Maghmour can be served at room temperature or cold.
Ingredients:
1 large eggplant
2 sliced onions
One handful of garlic
2 tsp minced garlic
5 chopped tomatoes
1 can 15 oz chickpeas
Salt
Black pepper
1 tbsp cumin
1/2 tsp chopped chili
3 tbsp tomato paste
2 tbsp dry mint
1 lemon juice
3 cups vegetable oil for frying
Drizzle olive oil
Preparation:
Cut eggplant into big pieces (skin on)
Heat vegetable oil. Fry eggplant.
Prepare a skillet. Heat olive oil and saute onions. Add garlic pieces and saute for 7 minutes. Add salt, black pepper, cumin. Add chickpeas to skillet and roast for 5 minutes. Add tomatoes and chili. Mix tomato paste with 3/4 cup water and add to skillet. Simmer for 10 minutes. Add fried eggplant. In a bowl, mix dry mint, garlic paste with lemon juice to skillet
DO NOT stir Maghmour. Simply shake the pot to mix all ingredients
Serve and dip into this heavenly appetizer with some pita bread!
