Bean lovers,
Did you know that Lima beans were found in Lima, Peru between 5000 and 6000 B.C.
So this is a quick easy recipe and again made in one pot, which is awesome for busy families with kids and jobs. Takes about 10 to 15 minutes to prepare and 35 minutes to cook and simmer.
Ingredients:
1 chopped onion
3 minced garlic
2 chopped bunch cilantro
3 chopped tomatoes
2 fillet mignon cut into medium size
15 oz frozen fordhook Lima Beans
Olive oil
3 tbsp tomato paste
Salt
1 tbsp cumin
1/3 tsp black pepper
1 lemon juice
Preparation:
In a skillet or deep pot, heat olive oil . Sautee onions to a bronze color. Add garlic and cilantro to pot. Add a pinch of salt. Add fillet mignon to pot. Add salt, cumin, and black pepper. Sautee for 2-3 minutes. Add tomatoes. Add Lima bean bag or 3/4 of a bag to pot. Add tomato paste and hot water to cover lima beans. Add lemon juice. Cover and simmer on medium to low heat for 35 minutes.
Serve with rice
