Time after time after time...I keep falling in love with this vibrant vegetable whether grilled, baked, fried, or sauteed.
Eggplant and eggplant dishes are my favorite and I do not worry. I always have a king presenting the core of my table.
Ingredients:
Baby eggplants sliced in half (Thin slices)
1/3 cup olive oil
2 lemon juice
1/2 tsp sumac
1 tbsp dry mint
1 tsp pomegranate molasses
1/2 cup chopped cilantro
1 tsp soy sauce
Directions:
Heat your oven at 375 degrees F
In a bowl, mix all the ingredients together
Hold each jewel and dip it in the bowl mix
Place on a baking dish
Bake for about 30 minutes
Pamper your eggplant with another drizzle of olive oil, cilantro, and pomegranate seeds, yum
