Remember the post about my son calling asking about the lentil soup recipe? So, my generous loving son, made the soup and texted me saying,"MOm, it was bad." Ooooooh, what did you do?", I asked.
Folks, I would not dare telling you what he added to the soup. A little tip here: An unhealthy ingredient.
Well, that thing he added took over the taste of the lentils. We all learn with experiments, right?
So, we chatted about dinner and how I prepare kofta.
Here is the recipe:
Ingredients:
1 pound ground lamb
1 pound ground beef
1 chopped onion
1 chopped parsley
Salt
Black pepper
1 tbsp cinnamon
5 potatoes
2 pounds sliced tomatoes
3 cups vegetable oil frying
3 tbsp tomato paste
1 tbsp pomegranate molasses
Preparation:
In a food processor pulse or by hand mix onions, parsley, ground lamb, ground beef, salt, black pepper, and cinnamon. Form mini kafta balls and place on a baking pan.
Heat oven to 375 degrees
Place kofta pan in oven for 25 minutes
In the meantime, peel potatoes and cut into circles. Sprinkle with salt and fry
Cut tomatoes into circles. Sprinkle with salt
Remove Kofta from oven. Mix tomato paste with pomegranate molasses. Dilute in 4 cups warm water. Pour the paste mix on kofta.Layer potatoes on top of Kofta. Layer tomatoes. Place in oven and bake for another 40 minutes.
