Atayeb was busy today preparing a glorious appetizer. A mix of fresh parsley, mint, tomatoes, and onions combined with bulgur (cracked wheat)

Ingredients:
2 cups bulgur
1/2 cup chopped parsley
3/4 cup chopped tomatoes
1/2 cup chopped mint
2 chopped green onions
Salt
White pepper
Black pepper
Cumin
Red pepper
2 tbsp pomegranate molasses
3 tbsp tomato paste diluted in little water
Preparation:
In a bowl, place the bulgur and add boiling water, so that the water level is just above the bulgur.
Soak for ten minutes
Squeeze bulgur by hand to remove excess water
In a food processor, add the bulgur, the chopped mint, chopped tomatoes, parsley, onion, and your spices (salt, peppers, cumin)
Pulse for few seconds
Remove the bulgur mix from the food processor and place in a bowl.
Add the pomegranate sauce and the tomato paste.
Knead the bulgur mixture by hand with all of its ingredients.
Arrange Kibbi on a plate and place in the fridge for an hour.
Serve with a squeeze of lemon juice and olive oil.
Enjoy with pita bread
