There is one and only one little secret about a good Hummus recipe. Buy the chickpeas, soak them, and cook them yourself.
Ingredients:
1 bag dry chickpeas
1 tbsp baking soda
Salt
Garlic
Lemon juice
Tahini (sesame paste)
Greek yoghurt
Preparation:
Overnight, wash and soak the chickpeas in water. (Add enough water since the chickpeas will expand)
Add one tbsp baking soda. Cover
In the morning, wash the chickpea then add fresh water and cook ( for about 3 hours/ or until you see the peel of the chickpea)
Drain the chickpeas
Wait for the chickpeas to cool
Measure one cup of cooked chickpeas
Blend in a food processor
Add 1/3 cup lemon juice or about 2 big lemons
1/3 cup Tahini
2 tbsp plain yoghurt
1 minced garlic
1/2 tsp salt
Blend all ingredients
* Your hummus should look creamy. You can add water bit by bit to smooth out the hummus
Your hummus should neither taste salty nor lemony. The taste of Tahini should take over
Drizzle olive oil
Decorate with parsley, mint, paparika or cumin
Serve with crackers or pita bread
