This is the first time I venture into another authentic, rich, unique and artistic cuisine, the "Aleppian cuisine."
With my experience in food tasting, traveling, learning, reading,experimenting and cooking, I have discovered that taste can be categorized into five basic tastes: Sweetness, Saltiness, Bitterness, Sourness, and Umami taste (delicious/yummy)
The end result was amazing just like the character of an Aleppian. Humility combined with spirituality. Wholesome combined with happiness and love presented on a platter, all in a twist!
Ingredients:
1 1/2 cup black lentils
3 cups boiling water
Salt to taste
Black pepper to taste
1 tbsp ground cumin
Pinch of red pepper flake
1 cup tamrind paste
4 sliced shallots
1 tbsp minced garlic
1 cup chopped cilantro
1 sheet puff pastry
1 big flat pita bread cut into squares
1/3 cup vegetable oil
Pomegranate seeds and cilantro for garnish
Preparation:
Lay puff pastry dough on a flat surface. Cut into thin small strips. Cover dough with a kitchen towel.
Wash lentil. Add 3 cups boiling water, salt, black pepper, cumin, pepper flakes. Simmer uncovered for 30 minutes.
Cook tamrind paste with 2 cups water for 15 minutes. Place tamrind in a blender. Pulse for 5 seconds. Pour tamrind onto lentils. Slowly add the dough strips to lentils and tamrind sauce stirring continuously. Cook for 15 minutes.* Your lentils should not dry out.
Prepare a skillet. Add oil to skillet. Fry shallots until golden brown. Remove from skillet. Fry the bread. Remove from skillet. Add garlic and cilantro. Saute for couple of minutes.
Now is the joy of layering this beauty. Prepare a platter. Serve lentils, then top with fried bread, onions, pomegranate seeds and cilantro.
