YES!!! It's FREEKEH (green wheat)
Ingredients:
2 cups freekeh (triple wash to remove unwanted grains or stones)
1 chopped onion
1 chopped cilantro
2 cups frozen peas
1 cup frozen favas
1 whole chicken
1 tbsp coriander
1 tbsp cinnamon powder
1 tbsp seven spices
1 tbsp caraway
Salt
Black pepper
Olive oil, about 5 tbsp
1/2 cup pine nuts
Preparation:
Bring a pot to a boil. Add chicken. Add 2 bay leaves, 2 cinnamon sticks, Salt, 1 whole peeled onion. Cover and cook for 45 minutes or until chicken fully cooked.
Heat olive oil in a skillet. Add chopped onions and brown the onion in color. Add cilantro and a pinch of salt. Remove onions and cilantro from skillet and set aside. Add olive oil to skillet if needed and roast freekeh. *This is an important step in preparing the freekeh
Add coriander, cinnamon powder, seven spices, caraway, salt and pepper. Roast for about 10 minutes. Add peas and favas. Mix all together.
Freekeh making is just like risotto making. Add one cup of chicken broth one at a time. Cook on medium to low heat until cooked but remains nutty.
Serve freekeh on a platter. Break the chicken pieces and arrange on freekeh. Roast pine nuts in a little oil. Add nuts to freekeh.
