This is a dish from me to you, to let you know that I have nothing to say, except that I love you and green grains. Ingredients: 1/2 cup frozen sweet corn 1 cup frozen split fava beans 2 cups freekeh 1 fried eggplant 1 sliced onion Salt Black pepper 1 tbsp caraway 1 tbsp ground cinnamon Handful of walnuts, raisins, pine nuts Olive oil Vegetable oil Cilantro for garnish Preparation: Heat vegetable oil. Cut eggplant into cubes (leave skin on) Fry eggplant Prepare a skillet, heat 1/3 cup olive oil. Sautee onions. Add corn and fava beans. Sautee for 10 minutes. Remove corn and beans from skillet. Set aside Triple wash freekeh. Add salt, black pepper, cinnamon, and caraway to freekeh. Roast freekeh for 5 minutes Add fried eggplant to freekeh, add corn and favas, add 2 cups water and cook on medium to low heat In the meantime, roast walnuts, raisins, and pine nuts Serve freekeh topped with nuts and cilantro Sahtein/Enjoy |
