Garbanzo salad? Yes, eat repeat, eat repeat, eat repeat :)
Ingredients:
1 cup cooked garbanzos. I like to home cook my own garbanzos OR you can get 1 can of cooked garbanzos.
For cooking garbanzos at home:
Overnight, wash and soak the garbanzos in water. (Add enough water since the garbanzos will expand)
Add one tsp baking soda. Cover
In the morning,wash the garbanzos then add fresh water and cook ( for about 2 hours. Do not overcook)
Place garbanzos in a strainer
Preparation:
1 cup cooked garbanzos (drained/no liquid)
1 tbsp ground cumin
1 tsp ground caraway
Salt to taste
Black pepper to taste
A squeeze of fresh lemon juice
A drizzle of olive oil
Parsley and tomatoes for garnish
Sahtein/Enjoy
