freekeh and arugula salad

Ingredients:
3 cups Freekeh (green cracked wheat)
2 cup arugula
1 lemon juice
3 cucumbers
3 green onions
2 radish
6 small tomatoes
1 guacamole
1/3 cup fresh cilantro
Olive oil
1 tbsp pomegranate sauce
1/3 tsp fresh chilli pepper
Salt
1 tsp anise powder
1/2 tsp black pepper
1/2 tsp caraway
1tsp dry mint for garnish

Directions:
Triple wash Freekeh
Place in a pot. Cover with water. Add salt, anise powder, black pepper, caraway.
Boil on low heat for about 15 minutes (your Freekeh should not be fully cooked. Should be a bit nutty)
Place in a colander
Let cool
In a bowl, add the chopped onions, cucumbers,and tomatoes
Add arugula
Add salt, lemon juice, oil, pomegranate sauce, chilli pepper, cilantro, radish and guacamole.
Add the Freekeh (cracked wheat)
Mix
Add dry mint
