Fish Kibbi With Eggplant

When you love someone or something, you would get so creative in so many different ways showing your love! Because I loooove AUBERGINES, I express my love cooking it in many different ways.  I prepared fish kibbi stuffed with aubergine and basil . The taste is out of this world!


Ingredients:
1 small chopped onion 
2 minced garlic
3 cups chopped fresh basil 
1 chopped red pepper 
2medium eggplant 
2 cod fish fillet Serving for 4
1 1/2 cups burgul
Salt according to taste 
Black pepper according to taste 
1 lemon zest
1 tsp coriander lime
2 tbsp cumin divided 
1 tbsp pomegranate sauce 
4 tbsp olive oil for sautéing the onions 
1/4 cup olive oil for baking fish kibbi
2 cups vegetable oil 

Preparation:
Cut the fish into medium size . Place in a bowl. Add salt, black pepper, and 1 tbsp cumin. Set aside
Prepare a pot for frying. Add 2 cups vegetable oil and heat. Cut the eggplant into medium size cubes ( leave skin on) place in a colander and sprinkle with salt. Fry eggplant 
In the meantime, heat olive oil and sautée the onions with garlic . Add the fresh basil, add the red peppers. Sautée for 5 minutes adding salt, black pepper, lemon zest, coriander lime, 1 tbsp cumin, and pomegranate sauce. Add the fried eggplant to the basil and peppers.  Mix gently. 
*This is your kibbi filling
Prepare a food processor. Soak 1 1/2 cups burgul for couple of minutes . Remove excess water by hand. Place burgul in the food processor. Add salt and pulse. Add the fish fillet to burgul and pulse! 
*This is your fish kibbi dough 
Prepare a pan . Add olive oil to cover the baking pan. Spread the fish dough on the pan. Add a layer of eggplant . Add another layer of fish dough . Cover with olive oil and bake for 25 minutes.
