
Teeta's (grandma) face shines when she cooks and her face glows when she prepares Sayyadiyeh. I never saw teeta walk in the kitchen, teeta hurries to please and moves like a breeze.
Teeta Fadwa loved Sayyadiyeh with fried pita bread on the side of her small plate, munch munch!
Taratour (tahini sauce) and roasted almonds on top of her Sayyadiyeh taste divine.
Ingredients:
4 cod fillets
1 chopped onion
1 minced garlic
2 cups basmati rice
1/2 cup vegetable oil
3 tbsp olive oil
Salt
1/3 tsp black pepper
1 tsp cumin
1/2 tsp cayene pepper
1/2 tsp coriander
1/2 cup almonds
Preparation:
In a bowl, mix 1/3 tsp salt, 1 tsp cumin, 1/3 black pepper, 3 tbsp olive oil
Marinate Cod
Cover and place in the fridge for an hour
In a pan, add 1 tbsp vegetable oil. Fry almonds, remove and set aside
Add the remaining vegetable oil to the pan and fry the onions until deep dark brown
Remove the caramelized onions and set aside
Add fish to pan with minced garlic
Fry fish until tender
Remove fish from heat and set aside
In the same pan, return caramelized onions with two cups rice
Stir on medium heat with a dash of salt for a minute
Add coriander and the cayene pepper
Add 4 cups water
Bring to a boil
Cover and cook on low heat until water is completely absorbed
Serve Sayyadiyeh with cod fillets and almonds on top
Garnish with fresh cilantro or parsley
