
Ingredients:
1 cup black lentils
2 cups chopped Romaine Lettuce
1 cup chopped mint
1/3 cup chopped radish
1 cup chopped Angel tomatoes
1/3 cup chopped parsley
1/4 tsp salt
1 tsp cumin
1 tbsp dry mint
1 tbsp sumac
1 minced garlic
2 squeezed lemons
1/3 cup olive oil
Directions:
Bring a pot to a boil
Wash the lentils and add to the pot
Add cumin
Cover tightly, reduce the heat, and simmer for about 25 minutes
Remove from heat and place in a bowl
Add one squeezed lemon to the lentils, a pinch of salt, and the minced garlic. Mix and let cool completely
Chop the lettuce, tomatoes, mint, radish, and parsley. Add to the lentils
Add dry mint, sumac, one lemon juice, 1/4 tsp salt, and olive oil
Mix all together
